Vegetable Potato Curry






Vegetable Curry is an Indian-style vegetarian dish made with potatoes, mixed vegetables, and a variety of spices, including turmeric, cumin, coriander, and garam masala. 

It is typically served with rice or naan bread and is considered a hearty and flavorful dish.


Ingredients:

- 4 large potatoes, peeled and cubed

- 1 onion, diced

- 2 cloves garlic, minced

- 2 tablespoons vegetable oil

- 1 teaspoon cumin seeds

- 4 hard-boiled eggs

- 1 teaspoon coriander powder

- 1 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon garam masala

- Salt to taste

- 1 cup frozen mixed vegetables (peas, carrots, green beans, corn)

- Coriander leaves for garnish


Instructions:


1. Heat the oil in a pan and add cumin seeds to it. Let it splutter for a few seconds.


2. Add the diced onions and sauté until they become translucent.


3. Then, add minced garlic and sauté for a minute until the raw smell goes away.


4. Add cubed potatoes and mix well. Cook for 5 minutes on medium heat.


5. Add the coriander, turmeric, chili powder, and salt. Mix well and cook for another minute.


6. Add the mixed vegetables and stir well. Cover the pan and let the vegetables cook on low heat for 15 minutes or until the potatoes are soft.


7. Add garam masala and cook for another minute.

8. Add your boiled eggs


9. Garnish with coriander leaves and serve hot with rice, pasta or rotis.
