Green Vegetable Pasta Recipe:


Ingredients:

- 8 oz pasta (your choice of shape)

- 2 tablespoons olive oil

- 2 cloves garlic, minced

- 1 cup broccoli florets

- 1 cup zucchini, sliced

- 1 cup parsley, finely chup

- 1 medium cucumber, slice

- 1 cup spinach leaves

- 1/2 cup frozen peas

- 1/4 cup fresh basil leaves, chopped

- Juice of 1 lemon

- Salt and pepper, to taste

- Grated Parmesan cheese (optional, for serving) 


Instructions:

1. Cook the pasta according to the package instructions until al dente. Drain and set aside.

2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

3. Add broccoli florets and zucchini to the skillet, and cook for about 5 minutes, until the vegetables are tender-crisp.

4. Add the spinach leaves and frozen peas to the skillet. Stir and cook for an additional 2 minutes, until the spinach has wilted and the peas are heated through.

5. Season the vegetable mixture with salt and pepper to taste.

6. Add the cooked pasta to the skillet and toss to combine everything together.

7. Drizzle the lemon juice over the pasta and vegetables, and stir well to evenly distribute the flavors.

8. Remove from heat and sprinkle chopped basil over the pasta, giving it a gentle toss.

9. Serve hot, with grated Parmesan cheese on top if desired. Enjoy your meal.
