1. **Rice Flour Pancakes:**
    
Ingredients:
    
 - 1 cup rice flour
 - 1/4 cup yogurt
 - 1/2 teaspoon baking powder
 - 1/4 teaspoon salt
 - Water (as needed)  

Instructions: 
     
1. Mix rice flour, yogurt, baking powder, and salt in a bowl.

2. Add water gradually to make a smooth batter.
     
3. Heat a non-stick skillet and pour ladlefuls of batter to make pancakes.
     
4. Cook until bubbles appear on the surface, then flip and cook until golden brown.


2. **Rice Flour Crepes:**
    Ingredients:

- 1 cup rice flour
     - 2 eggs
     - 1 1/2 cups milk
     - 1/4 teaspoon salt

 1. Whisk together rice flour, eggs, milk, and salt to form a thin batter.

3. Roll the dough into small balls, flatten with a fork, and place on a baking sheet.
     
4. Bake at 350°F (175°C) for about 12-15 minutes or until golden.

4. **Rice Flour Dumplings (Modak):**
   
  Ingredients:
    
- 1 cup rice flour
- 1/2 cup water
- 1/2 cup grated coconut
- 1/2 cup jaggery (or sugar)
- 1/2 teaspoon cardamom powder
   
Instructions:
     
1. Boil water and add rice flour, stirring quickly to form a dough.
     
2. In a separate pan, melt jaggery (or sugar) with coconut and cardamom to make the sweet filling.
     
3. Take small portions of the dough, flatten them, add a spoonful of the filling, and shape into dumplings.
     
4. Steam the dumplings for 10-15 minutes until cooked.

5. **Rice Flour Dosa (Indian Crepe):**

   
Ingredients:
     
- 1 cup rice flour
- 1/4 cup urad dal (black gram) flour
- 1/4 teaspoon fenugreek seed 
-Water (as needed)
- Salt to taste

Instructions:
     
1. Mix rice flour, urad dal flour, fenugreek seeds, and salt.
     
2. Add water gradually to create a thin batter. Let it ferment for a few hours or overnight.
     
3. Heat a non-stick skillet, pour batter, and spread it thin to make dosas. Cook until crispy.
