Nigerian Jollof Rice is a popular rice dish in Nigeria and other West African countries. 

It is made with long-grain rice, tomato sauce, and a blend of spices. The dish is usually served with fried plantains, coleslaw, or chicken. 

Nigerian Jollof Rice is a staple dish in most Nigerian households and is often served at weddings, parties, and other celebrations. 

The dish is known for its vibrant red color, spicy taste, and rich aroma. Nigerian Jollof Rice is enjoyed by people of all ages and is a must-try for anyone visiting Nigeria or other West African countries.

Ingredients:
- 2 cups long-grain parboiled rice
- 2-3 cups tomato stew
- 2-3 cups water or chicken stock
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1-2 scotch bonnet peppers, chopped (optional)
- 2-3 tablespoons tomato paste
- 2-3 tablespoons vegetable oil
- 1-2 teaspoons salt (to taste)
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1 bay leaf
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 2-3 tablespoons butter (optional)

Directions:

1. Rinse the rice in cold water until the water runs clear. Drain well and set aside.

2. In a large pot, heat the vegetable oil over medium heat and sauté the chopped onions and peppers until they are softened and fragrant.

3. Add the tomato paste and stir well until it is fully incorporated.

4. Next, add the tomato stew and stir well to combine with the onion and pepper mixture.

5. Season the mixture with salt, curry powder, thyme, bay leaf, smoked paprika, garlic powder and ginger powder. Mix well and let it cook for 5-7 minutes.

6. Add the rice to the pot and stir well until it is fully coated with the tomato stew mixture.

7. Add the water or chicken stock to the pot and stir gently. Reduce the heat to low, cover the pot and let the rice simmer for 25-30 minutes until it is cooked through.

8. Check the rice occasionally to ensure that there is enough liquid in the pot. If the rice seems dry, add a little more water or stock as needed.

9. Once the rice is cooked, remove the pot from the heat and let it rest for a few minutes.

10. Fluff the rice with a fork and add some butter (if using) to give it a richer taste. Serve hot and enjoy your delicious Nigerian Jollof Rice!
