Chef's Sly Roasted Potatoes with Vegetables



I love potatoes because of the health benefits packed in the potato. It can be prepared in so many ways. Like . Grilled, Bake, Roast, Boiled, Mashed, and others. 

Here: I present to you one of my favorite.

Chef's Sly Garlic Vegetables Roasted Potatoes. You need to see it. I have the video on YouTube. You can watch it here.




Ingredients:

- 1.5 lbs. potatoes, washed and cut into small cubes

- 1 red bell pepper, chopped

- 1 green bell pepper, chopped

- 1 red onion, chopped

- 2 cloves garlic, minced

- 1 tsp. dried thyme

- 1 tsp. dried oregano

- 1 tsp. smoked paprika

- Salt and pepper, to taste

- 2-3 tbsp. olive oil


Directions:

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, mix together the diced potatoes, chopped bell peppers, and chopped onion.

3. Add minced garlic, thyme, oregano, smoked paprika, salt, pepper, and olive oil to the bowl, and toss well to coat all the vegetables evenly.

4. Spread the vegetable mixture onto the prepared baking sheet in a single layer.

5. Bake in the preheated oven for 25-30 minutes, stirring occasionally, until the potatoes are tender and slightly browned.

6. Serve the roasted potatoes and vegetables hot as a side dish or as a main course with a side of protein.
