Vegan Creamy Vegetable Stir-Fry

Ingredients:
- 1 cup broccoli florets
- 1 cup carrot slices
- 1 cup corn kernels
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 cup soy sauce (ensure it's labeled as vegan)
- 1/4 cup vegetable broth
- 1/2 cup soy milk
- 1 tablespoon cornstarch (to thicken the sauce)
- Salt and pepper to taste

Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
3. Add broccoli florets, carrot slices, and corn kernels to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
4. In a separate bowl, whisk together soy sauce, vegetable broth, soy milk, and cornstarch until well combined.
5. Pour the sauce mixture into the skillet with vegetables, stirring well.
6. Cook for an additional 2-3 minutes until the sauce thickens and coats the vegetables. Season with salt and pepper to taste.
7. Remove from heat and serve the stir-fry over a bed of cooked brown rice or quinoa.
