What is Chicken Maryland.

Chicken Maryland, also sometimes called "Maryland Chicken" or "Chicken Maryland Style," is a popular dish that originated in the Southern United States. 

It typically consists of a breaded and fried chicken breast, often with the bone-in, served with a side of mashed potatoes and gravy, green beans, and a cornbread muffin.


The chicken is usually marinated in buttermilk or a seasoned brine before being breaded with a mixture of flour, breadcrumbs, and various spices such as paprika, garlic powder, onion powder, and cayenne pepper. It is then deep-fried until golden brown and crispy on the outside, while still remaining juicy and tender on the inside. 


The dish is typically served with a rich and creamy gravy made from the pan drippings, which is poured over the chicken and mashed potatoes. The green beans are often cooked with bacon or ham for added flavor, and the cornbread muffin provides a sweet and crumbly contrast to the savory components of the dish.


Chicken Maryland is a hearty and comforting meal that is enjoyed by many for its flavorful combination of crispy chicken, creamy gravy, fluffy mashed potatoes, and traditional Southern sides. It is often seen as a classic American comfort food dish.

Chef Sly Classic Chicken Maryland:


Ingredients:

- 4 chicken breast fillets

- 1 cup all-purpose flour

- Salt and pepper, to taste

- 2 eggs, lightly beaten

- 1 cup breadcrumbs

- 1/2 cup vegetable oil, for frying

- 4 slices bacon

- 4 slices pineapple, drained

- 4 maraschino cherries

- 4 tbsp butter

- 2 tbsp brown sugar

- 2 tbsp Worcestershire sauce

- 2 tbsp lemon juice


Instructions:

1. Preheat your oven to 350°F (175°C).


2. Pound the chicken breasts until they are about 1/4 inch thick. Season with salt and pepper.


3. Place the flour in a shallow bowl. In a separate bowl, beat the eggs. Place the breadcrumbs in another shallow bowl.


4. Dip each chicken breast in the flour to coat, then dip in the beaten eggs, and finally coat with breadcrumbs.


5. Heat the vegetable oil in a large skillet over medium heat. Fry the breaded chicken breasts until golden brown on each side, about 3-4 minutes per side. Remove chicken from skillet and drain on paper towels.


6. In the same skillet, fry the bacon slices until crispy. Remove from skillet and set aside.


7. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, Worcestershire sauce, and lemon juice until well combined and slightly thickened.


8. Place the fried chicken breasts in a baking dish. Pour the sauce over the chicken, making sure to coat each piece.


9. Top each chicken breast with a slice of bacon, a pineapple ring, and a maraschino cherry.


10. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the sauce is caramelized.


11. Serve the Chicken Maryland hot, garnished with additional pineapple slices and cherries, if desired. Enjoy!
